The Risotto Pescatore is Ciao Italia's signature dish. It is a saffron-infused risotto cooked to order with shrimp, mussels, clams, calamari, and fresh fish. Each order takes about 25 minutes because the risotto is stirred by hand and the seafood is added fresh during the cooking process.
Authentic Italian risotto cannot be rushed. The rice must be toasted, then slowly fed warm broth while being stirred continuously. This process takes about 20 to 25 minutes and is what gives the risotto its signature creamy texture without using heavy cream. Ciao Italia cooks every order fresh.
The Risotto Pescatore is the most popular, but Ciao Italia also offers other risotto preparations depending on the season. Ask your server about available options. The kitchen uses Arborio rice and the same hand-stirred technique for all risotto dishes.
