The problem is that most of those versions are built on shortcuts. Pre-portioned frozen chicken, canned mushrooms, a marsala sauce that comes out of a bag and gets reheated in a pan. It fills a plate, but it does not fill a memory. You forget it before you leave the parking lot.
At Vincenzo Cucina Italiana, our Chicken Marsala starts with hormone-free chicken breast. Not because it is trendy, but because better ingredients make better food. The chicken is pan-seared until golden, then finished with thick-sliced portobello mushrooms and a marsala truffle sauce that is built from scratch in the same pan. The marsala wine reduces down with the pan drippings, the mushrooms release their earthy flavor, and a touch of truffle ties the whole thing together.
