Fresh vs. Dried: Why It Matters
Dried pasta has its place in Italian cooking, but fresh handmade pasta is an entirely different experience. Fresh pasta cooks in about two minutes instead of ten. The texture is tender and slightly chewy rather than firm and starchy. Fresh noodles cling to sauce naturally because their porous surface absorbs flavor as they cook. And the taste of good eggs and quality flour comes through in a way that dried pasta never achieves.
At Vincenzo, we use Italian double-zero flour and farm-fresh eggs to build our doughs. Each pasta variety has its own recipe, its own technique, and its own ideal pairing. The gnocchi dough is potato-based for lightness. The lasagna sheets are thin and delicate so they meld with the Bolognese. The pappardelle is cut wide to cradle rich meat sauces.
