Dried pasta from a box has its place. But fresh pasta is a completely different experience. It cooks faster, absorbs sauce better, and has a tender, silky texture that dried pasta simply cannot match.
At Vincenzo, we use Italian "00" flour and farm-fresh eggs. The dough is mixed, rested, rolled, and shaped by hand. Our gnocchi starts with real Idaho potatoes, boiled, riced, and gently folded into dough. The result is a cloud-like dumpling that melts in your mouth.
Most restaurants on International Drive use dried pasta from a distributor. We do not. That is the difference.
One of the best things about dining at Vincenzo is that you can pair a fresh pasta dish with anything on the menu. Many guests order a USDA Prime steak and add a side of gnocchi or pappardelle. Others share a lobster ravioli and a plate of tortellini for the table. Our lasagna ($24) is one of the best values on the menu and has been a favorite since we opened.
Happy hour runs Monday all night, Tuesday through Friday 5 to 7 PM. Wine Down Wednesday means half off all wines by the glass. A plate of fresh pappardelle with a glass of Chianti for half price. That is a good evening.
